Demian Willette, associate professor of biology at LMU, conducted a study using DNA barcoding to identify species found in imitation crab sold in grocery stores across Los Angeles. The results found evidence of unlabeled shark meat in more than 60 percent of the sampled products, some of which was sourced from endangered species. He hopes that the findings will encourage more specific labeling and supply chain transparency.
